Before you work on your batter, preheat the oven to 350 degrees Fahrenheit and take your cream cheese out of the fridge to soften up. To make your cheesecake, you'll need these tools: a 25cm springform pan, aluminum foil, electric hand mixer or blender, measuring cup, measuring spoons, spatula, and a large, tall baking pan.

Making Your Crust

First, use your fingers or a brush and rub some butter, olive oil, or coconut oil along the bottom and sides of the springform pan. Take your aluminum foil and wrap it around the pan. For your crust, crush the graham crackers with your blender until it's a crumbly texture. Then melt your tablespoons of butter and mix it with the crumbs. Pour the mixture into your springform pan and use either your hands or the bottom of a glass cup to secure the crust on the pan. Make sure it's tightly packed.

Once the pan is full of crust, throw it in the oven and bake it for 10 minutes. It should be browning at the sides. Once it's done, take the pan out and let it cool.

Making Your Filling

While your crust is cooling, you can start to make your cheese filling. To do this, use your electric hand mixer and mix together your cream cheese, white sugar, and salt. It should have a fluffy consistency once you're done mixing. Then, add in your sour cream, lemon juice, and vanilla extract. Blend again until it's fluffy again. Finally, blend in your eggs one at a time.

Combining and Bake

Take your filling and pour it onto the crust. Make it even, and put your cheesecake form into your large baking tray. Pour water into the baking tray until it's at the same height as the cheesecake. Then, stick the baking tray into the oven and bake it for 50 minutes to an hour. Once it's done, turn off the heat but keep the cheesecake inside.

Slightly open the oven door to allow it to cool faster. It'll take around 1 hour until it's done cooling. The final step is put the springform pan in the fridge to chill for a couple of hours ranging from 4 to 6. You can also leave it in there longer if you prefer.

The only part that's annoying about making a cheesecake is that you have to wait for a long time. It's not a great dessert to make if you're in a rush; if you have the time to create this amazing, fluffy cheesecake, definitely try out this recipe!
